長野県南信の銘酒蔵・喜久水酒造が原料に徹底的にこだわった信州産の本格そば焼酎。
主原料となる蕎麦は長野県の伊那谷に位置する下条村と飯島町産を使用し、米麹(焼酎麹)には長野県産美山錦を使用しその麹菌は風味や濃厚な旨さを醸し出す「黒麹」を使用。
さらに喜久水酒造のこだわりは続きます。
主原料のそばと醸すために必要な米麹の割合を8対2、つまり二八蕎麦の蕎麦を食べてるかのような香り高い風味と芳醇コクをお楽しみいただけます。

Kikusui Shuzo, a respected brewery from the southern Ina region of Nagano Prefecture, has crafted this authentic Shinshu soba shochu with uncompromising attention to its ingredients.
The buckwheat—its primary component—is sourced exclusively from Shimojo Village and Iijima Town in the Ina Valley, areas renowned for their pristine growing conditions. For the rice koji (shochu koji), Nagano-grown Miyamanishiki rice is used, fermented with black koji, chosen specifically for its ability to bring depth, richness, and expressive aroma.
Kikusui’s dedication goes even further. The ratio of buckwheat to rice koji is set at 80:20, echoing the classic nihachi soba tradition. The result is a remarkably fragrant shochu, bursting with the aroma of freshly milled buckwheat and a full, satisfying umami that unfolds beautifully on the palate.
From straight to hot-water dilution, this soba shochu offers a refined yet comforting drinking experience—one that truly captures the soul of Shinshu.
