【夜明け前 大吟醸】は、全ての酒蔵が求める山田錦と言っても過言ではないこの希少な酒米を３５％まで磨き上げ、蒸米の放冷時間や乾燥、仕込み時の温度に至るまで、細心の注意を払い育て醸し上げていきます。

こうして一切の妥協を惜しまず愛情を注ぎ込まれた【夜明け前 大吟醸】は、ただ単にフルーティな辛口の日本酒という表現では伝えきれません。

Few ingredients command greater respect in the world of sake than Yamada Nishiki, Japan's most prestigious sake rice. Yet even within this legendary variety, one origin stands above all others: Kuchiyokawa, Miki City, Hyogo Prefecture—an officially designated Special A (Toku-A) growing district, regarded as the pinnacle of Yamada Nishiki cultivation.

For Yoakemae Daiginjo, only this extraordinary rice is selected and meticulously polished to 35%, revealing its purest heart. Every stage of brewing—from cooling the steamed rice to precise temperature control during fermentation—is carried out with unwavering care and patience.
