西飯田酒造店といえば全国でも数少ない花酵母を使用できる酒蔵。
その花酵母を使用した銘酒「積善」は、幻舞や豊賀、夜明け前と同じく非常に入手しづらい超希少酒として知られています。

この【信州の地ワインメローズ・ナイアガラ】は、その西飯田酒造店の自社農園（長野県長野市篠ノ井）で育てた【ナイアガラ（白葡萄）】のみを使用し、花酵母で醸造した白ワインです。
ナイアガラらしい華やかで甘やかなマスカットフレーバーが立ち上がります。

Shinshu Local Wine Mellow’s Niagara

Forget what you think you know about Niagara.

Nishiida Shuzoten is one of the few breweries in Japan renowned for working with rare yeasts cultured from flowers. Its celebrated Sekizen sake series, brewed with these distinctive flower-derived yeasts, has earned a devoted following and is notoriously difficult to find.

Now, that same spirit of experimentation has found its way into wine.

Shinshu Local Wine Mellow’s Niagara is made exclusively from Niagara grapes grown in the winery’s own vineyard in Shinonoi, Nagano, and fermented using one of Nishiida’s distinctive flower-derived yeasts.

Bring the glass to your nose and Niagara immediately makes its presence known: an exuberant, almost Muscat-like bouquet, lush with sweet, fragrant fruit. Everything about the aroma seems to whisper, “This is going to be sweet.”

Then comes the first sip.

It isn’t.

Instead, the palate is remarkably fresh, crisp and dry. The generous fruit remains, but without heaviness or cloying sweetness. As its bright, juicy aromatics rise through the finish, it is easy to imagine yourself surrounded by rows of translucent, pale-green grapes shimmering in a Nagano vineyard.
